Scott Wise pins down Fort Wayne location for next Scotty’s Brewhouse

Restaurateur Scott Wise, who will open a Brownsburg location of his popular Scotty’s Brewhouse on April 14 and a Carmel location April 21, said he’s signed a lease for a Fort Wayne restaurant.

The Fort Wayne location, to open this fall at 6282 W. Jefferson Blvd., has been a long time coming, acknowledged Wise. “It’s been a tease for a long time,” he said. “We started looking at Fort Wayne two years ago.”

Wise said he had to nix a location found last year when the deal to launch a Brewhouse in Mishawaka came together. An earlier effort to open in the Fort Wayne ballpark didn’t work out either. “I’ve hated how it happened,” Wise said, but added that “it’s going to be a fantastic market for us.”

Renovation of the building, a former BW3 located near Jefferson Boulevard and Getz Road, should start in May or June, he said, with an opening planned for September. “We’re going to completely gut it to give it our look,” he said. “And it has a beautiful patio that overlooks this stream and a woodsy area.”

As far as the food goes, you can expect to see more healthful options on all Brewhouse menus.  “Gluten-free and healthy-type options are two areas where I’ve seen change happen, and it’s not going away,” Wise said. “We’re going to put a gluten-free section on the kids’ menu, which is new for us.”

The Fort Wayne restaurant will be the ninth Scotty’s Brewhouse location, but more are possible, he said. “Evansville is still a good possibililty,” he said, adding that he’s also looked at Terre Haute. “And the 116th and Olio Road area, we’re still interested in that.”

Wise hopes to eventually expand beyond Indiana. “My goal is to see if we can test the waters out of state,” he said. “I’d like to see us in Louisville and Cincinnati.”
